As a focus on Healthy Eating, Lisa will be making Garbanzo Bean cookies (very healthy!). We would like to post the recipe in the eblast next week so people will have it.
Garbanzo Bean Cookies
1 ½ cup chickpeas (15 oz can)(drained and rinsed- save liquid)
½ cup oat flour
½ cup coconut sugar
1 Tbsp. Maple syrup
1 Tbsp. Aquafaba (chickpea liquid)
1Tbsp. almond or peanut butter
1 Tsp vanilla
½ tsp salt
½ tsp baking soda
1 tsp. raw apple cider vinegar
1 Flax egg
¾ cup dark vegan chocolate chips
Black Bean cookies
To above recipe, add:
3 Tbsp. cacao
1 extra Tbsp. Maple Syrup
Bake 350 22-24 minutes.
